Asparagus tuna salad with quail egg
The asparagus is very healthy, the quail egg too and together these are mutiply healthy, tasty foods.
Ingredients:
- 200 g asparagus
- 1 can tuna
- a handful of cherry tomatos, chopped
- 2 tbsp olive or capers
- 6-7 pcs quail egg
- tost for serving
for the dressing:
- 1 tbsp white wine vinegar
- 1 tsp mustardt
- 1 tbsp olive oil
- 1 tbsp water
- a pinch of salt and pepper
Cook the asparagus for 2 minutes in boiling water, then droppig the water. Cook the quail eggs for 5 minutes in boiling water. Meanwhile chop the tomatoes, prepare the berries, pour the oil from the tuna and mix the ingredients of the dressing. Peel the eggs and cut into half. Put all the vegetables and eggs in a bowl, mix carefully and serve with the dressing and toasts.
