Minestrone soup
The minestrone soup can be made diversely, does not have a fixed recipe, even the Italians make it diversely in the different regions. So take it easy and let’s cook a hearty vegetable soup!

1 pc carrot, rasped on the bigger hole
1 pc smaller celery, rasped on the bigger hole
1 pc onion, chopped
100-150 g smoked beefy bacon, diced
2 pcs tomato puree (140g/can)
couple of fresh tomatoes
some leaves of cole
1 pc smaller zucchini, chopped
1 pc potato, chopped
100 g Italian paste
one can of white bean, 250 g
salt, pepper
100 ml red wine, if you have at home
2 l stock
Directions
- Sear the bacon on heated oil, then add the onion, rasped carrot and celery. Sear 5 more minutes until it collapses. If you have wine at home, this is the time to add it and cook for a couple of minutes. Add the potato, tomato and stock, season with salt and pepper. Cook 5 minutes. Now, put the zucchini, cole and finally the crushed pasta in the soup. When the pasta is soft add the bean, boil once and the soup is ready. Serve with parmesan and fresh basil.
